  • 1 c (200g) light brown sugar
  • 1/3 c (79ml) pure maple syrup
  • 1 large egg yolk, room temperature
  • 1/2 c (125g) canned pumpkin, blotted
  • 2 tsp (10ml) vanilla extract
  • 1/2 tsp (2.5ml) maple extract, optional
  • 1/2 c (100g) granulated sugar
  • 1/2 tsp pumpkin or chai spice blend

Instructions

  1. Prepare brown butter: Melt and whisk until golden brown, then cool.
  2. Blot canned pumpkin to reduce moisture.
  3. Whisk dry ingredients together; set aside.
  4. Mix cooled brown butter with sugars and wet ingredients until combined.
  5. Gradually add dry mixture; do not overmix.
  6. Chill dough for at least 8 hours.
  7. Preheat oven; prepare baking sheets with parchment paper.
  8. Roll dough balls in spiced sugar mixture and place on sheets.
  9. Bake until slightly underbaked for maximum chewiness; cool on racks.
