  • 2.5 tbsp minced garlic
  • 1 tsp avocado oil (or olive oil)
  • 5 oz fresh spinach (chopped)
  • 1/2 cup heavy cream
  • 1 tbsp cream cheese (optional)
  • 1/2 cup freshly grated parmesan cheese (plus extra for topping)
  • Salt and pepper (to taste)
  • Grated or sliced mozzarella for topping

Instructions

  1. Preheat your oven to 400°F.
  2. Slice the spaghetti squash in half lengthwise and scoop out the seeds. For easier cutting, microwave the squash for 3–5 minutes after piercing it several times with a knife.
  3. Rub the cut sides with olive oil and place them cut side down on a baking sheet. Roast for about 40 minutes until tender.
  4. In a skillet over medium-high heat, sauté minced garlic in olive oil until fragrant, then add chopped spinach until wilted.
  5. Stir in heavy cream, cream cheese (if using), and parmesan cheese; season with salt and pepper before removing from heat.
  6. Once roasted, fluff the squash strands with a fork and mix in the creamy sauce. Top with mozzarella and additional parmesan.
  7. Bake at 350°F for about 20 minutes until hot and bubbly, then broil for perfect browning.
