  • 1/2 cup unsalted butter (browned)
  • 1/4 cup + 2 tablespoons granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned rolled oats
  • 3/4 cup finely grated carrot
  • 1/3 cup shredded sweetened coconut
  • For the cream cheese buttercream: 1/2 cup unsalted butter (softened), 1/4 cup cream cheese (chilled), 2 1/2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, combine browned butter, granulated sugar, and brown sugar until well mixed. Add egg and vanilla; mix until smooth.
  3. In another bowl, whisk together flour, oats, baking soda, cinnamon, ginger, nutmeg, and salt. Gradually combine dry ingredients with wet mixture along with grated carrots and coconut.
  4. Scoop tablespoon-sized portions onto prepared baking sheets, spacing them about 2 inches apart. Bake for 10 minutes or until edges are golden.
  5. While cookies cool, prepare the cream cheese buttercream by beating softened butter and cream cheese until creamy. Gradually add powdered sugar while mixing on low speed until combined; mix in vanilla extract and heavy cream until fluffy.
  6. Once cookies are completely cooled, spread or pipe cream cheese buttercream on one cookie half and top with another cookie half to create sandwiches.
