- ½ cup brown sugar
- ½ cup granulated sugar
- 1 large egg + 1 egg yolk
- 1½ cups all-purpose flour
- 2½ teaspoons ground cinnamon

- 1 cup shredded carrots
- ½ cup chopped pecans
- For frosting: 4 oz cream cheese, 4 tablespoons unsalted butter, 1½ cups powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a mixing bowl, combine melted butter, brown sugar, granulated sugar, egg, egg yolk, and vanilla extract; whisk until smooth.
- In another bowl, whisk together flour, cinnamon, ginger, salt, and baking powder. Gradually add this to the wet ingredients.
- Fold in shredded carrots and chopped pecans.
- Pour the batter into the prepared pan and bake for about 23 minutes or until a toothpick comes out clean.
- Allow to cool completely before frosting with cream cheese mixture.
