  • 2 pounds beef roast (chuck steak or beef round)
  • 1 tablespoon adobo seasoning
  • 3 tablespoons vegetable oil
  • 1 small onion (chopped)
  • 1 green bell pepper (chopped)
  • ¼ cup sofrito
  • 4 cloves garlic (minced)
  • 8 ounces tomato sauce
  • 1 pound potatoes (cut into bite-sized pieces)
  • 1 large carrot (cut into bite-sized pieces)

Instructions

  1. Trim and cube the beef roast into 1-inch pieces, season with adobo seasoning, salt, and pepper.
  2. Heat vegetable oil in a large pot over medium-high heat and sear the beef cubes until browned on all sides. Remove and set aside.
  3. In the same pot, lower the heat to medium and sauté onions, bell peppers, and sofrito for about 5 minutes until softened.
  4. Stir in garlic and cook for another minute.
  5. Return the seared beef to the pot along with oregano, tomato sauce, water, olives, capers, and bay leaves. Stir well.
  6. Bring to a boil, reduce heat to low, cover, and simmer for about 30 minutes.
  7. Add potatoes and carrots; return to a boil before covering again for another 30 minutes or until beef is tender.
  8. Serve hot with rice or tortillas.
