Ingredients

Scale
  • 1 lb ground chicken
  • 2 tbsp Cajun seasoning
  • 1/2 cup tomato sauce
  • 8 oz sharp cheddar cheese
  • Brioche hamburger buns
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1/2 cup low-sodium chicken broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp brown sugar (optional)
  • salt (to taste)
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 1/4 tsp paprika
  • softened butter (for toasting, as needed)
  • freshly ground black pepper (to finish)

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add ground chicken and cook until no longer pink, about 5-7 minutes. Stir in chopped onion and garlic; cook for another 4 minutes until translucent.
  2. Add Cajun seasoning and tomato paste; mix well. Pour in chicken broth, tomato sauce, and Worcestershire sauce. Simmer uncovered for 8-10 minutes until thickened.
  3. For the cheese sauce, melt butter in a small saucepan over medium heat. Whisk in flour to form a roux, then gradually add milk while whisking until thickened. Stir in shredded cheese until melted and smooth.
  4. Toast brioche buns, fill with Cajun chicken mixture, drizzle with cheese sauce, and serve immediately.
