  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup graham crackers (crushed)
  • 1 tbsp sugar
  • 3 tbsp butter (melted)
  • 8 oz semi-sweet chocolate
  • 1 cup heavy cream
  • 1 cup shredded coconut (toasted)
  • 1 cup Cadbury Mini Eggs

Instructions

  1. Preheat your oven to 350°F.
  2. In a food processor, crush graham crackers into fine crumbs. Mix with sugar and melted butter.
  3. Press mixture into the bottom of cheesecake pan cups to form crusts.
  4. In a mixing bowl, beat softened cream cheese and sugar until smooth. Add eggs and vanilla; mix until combined.
  5. Pour cheesecake mixture over prepared crusts.
  6. Bake for 13-15 minutes until set but slightly jiggly in the center. Cool on a wire rack.
  7. Prepare ganache by melting chocolate with heavy cream until smooth; drizzle over cooled cheesecakes.
  8. Top with toasted coconut and Cadbury Mini Eggs before serving.
