- 4 flour tortillas
- 1 tablespoon olive oil
- 1 small red onion, diced
- 2 garlic cloves, minced
- 1 small red pepper, diced
- 1 (400g) can white beans, drained and rinsed
- 90 ml buffalo hot sauce
- 100 g sour cream
- 1 teaspoon smoked paprika
- 0.5 teaspoon cayenne pepper
- 0.5 teaspoon dried oregano
- 0.5 teaspoon cumin
- Salt and pepper to taste
- 150 g shredded cheese (cheddar and mozzarella)
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a frying pan over medium heat. Add diced onion and red pepper; sauté for 5–6 minutes until softened.
- Stir in minced garlic and cook for another minute until fragrant.
- Incorporate white beans, buffalo sauce, sour cream, spices, salt, and pepper. Mix well.
- Mash some of the beans with a wooden spoon to thicken the mixture.
- Fill each tortilla with the bean mixture and top with shredded cheese.
- Fry each taco for 2 minutes on each side until crispy and golden brown. Garnish with cilantro before serving.
