- 10 ounces spaghetti
- 2½ cups diced Roma tomatoes
- ½ cup finely chopped red onion
- 4 garlic cloves, minced
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- 4 tablespoons olive oil, divided
- 3 tablespoons balsamic vinegar, divided
- ¼ cup thinly sliced basil (chiffonade), divided
- 2 teaspoons dried oregano
- 2 tablespoons unsalted butter
- 1 teaspoon lemon juice
- 6 ounces mozzarella balls
Instructions
- Cook spaghetti in a large pot according to package directions until al dente. Drain and reserve some pasta water.
- In a bowl, combine diced tomatoes, red onion, half the garlic, salt, pepper, 2 tablespoons olive oil, and 1 tablespoon balsamic vinegar. Set aside.
- In a skillet over medium heat, add remaining olive oil and garlic; sauté until fragrant. Add reserved pasta water and butter; stir until combined.
- Toss drained spaghetti with the garlic sauce, lemon juice, mozzarella balls, and bruschetta mixture until well combined.
- Serve garnished with additional basil and a drizzle of balsamic vinegar.
