Scale
  • 1.5 pounds boneless skinless chicken breasts or thighs
  • 1 can pineapple chunks (20 oz)
  • 0.5 cup brown sugar
  • 0.33 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon ground ginger
  • 2 tablespoons olive oil
  • Garlic powder, salt, and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Season the chicken pieces with salt, pepper, and garlic powder.
  3. In a skillet over medium-high heat, heat olive oil and brown the chicken for about 4 minutes until golden.
  4. In a mixing bowl, whisk together brown sugar, soy sauce, pineapple juice (from the can), rice vinegar, ground ginger, and cornstarch until smooth.
  5. Transfer the chicken to the baking dish, pour over the pineapple chunks with juice, and drizzle with the glaze. Stir gently to coat.
