  • 3/4 pound unsalted butter (3 sticks), softened and cut into pieces
  • 1 1/4 cup pureed blackberries (for buttercream)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In one bowl, mix flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, whisk together buttermilk, canola oil, eggs, vanilla extract, almond extract, bourbon, and hot coffee.
  4. Combine wet and dry ingredients until smooth. Pour into prepared pans and bake for 30-40 minutes or until a toothpick comes out clean.
  5. For the buttercream: Whip egg whites until foamy; gradually add sugar until stiff peaks form. Mix in softened butter and pureed blackberries until smooth.
  6. Once the cakes are cool, assemble by layering the buttercream between the cake layers and frosting the top and sides.
