  • ½ cup reserved bacon fat (chilled)
  • ¾ cup granulated sugar
  • ¾ cup brown sugar (packed)
  • 3 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 8 ounces dark chocolate (chopped)

Instructions

  1. In a large skillet, cook bacon until crispy. Drain on paper towels and reserve about ½ cup of bacon fat in the pan.
  2. Preheat oven to 375°F. In a medium bowl, whisk flour, baking soda, salt, and baking powder.
  3. In a separate bowl, mix the butter, chilled bacon fat, granulated sugar, brown sugar, bourbon, and vanilla until creamy. Add eggs one at a time.
  4. Gradually stir in the flour mixture until just combined; fold in bacon pieces and chopped chocolate.
  5. Drop rounded tablespoons of dough onto parchment-lined baking sheets. Bake for 9 to 11 minutes until lightly browned.
  6. Cool on cookie sheets for five minutes before transferring to racks.
