  • 500 g bread flour
  • 355 g room temperature water (335g initially + 20g for salt)
  • 100 g fresh blueberries
  • Zest of one lemon
  • 10 g salt

Instructions

  1. Feed your starter 6-10 hours before using to ensure it's active.
  2. In a large bowl, mix together 335g of water, the active starter, and flour until well combined.
  3. Cover and let rest for 20-30 minutes (autolyse).
  4. Add salt and remaining water (20g) and knead gently for 1-2 minutes.
  5. Allow bulk fermentation at room temperature for about 30 minutes. Add blueberries and lemon zest; perform stretch-and-fold on each side.
  6. Let rest again for another 30-40 minutes; repeat stretch-and-fold twice more.
  7. Shape the dough and place it in a proofing basket to rise for about 2 hours at room temperature or refrigerate up to 72 hours.
  8. Preheat oven to 500°F (260°C) for at least 30 minutes before baking.
  9. Score the loaf and bake covered for 20 minutes; then uncover and lower the temperature to 400°F (200°C) for an additional 30-35 minutes until golden brown.
  10. Cool on a rack for at least 1–2 hours before slicing.
