  • 1 cup buttermilk, at room temperature
  • 0.5 cup blackberry puree
  • 1 cup fresh blackberries
  • For frosting: 1 cup unsalted butter, at room temperature
  • 3.5 cups powdered sugar
  • 0.25 cup blackberry puree
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In one bowl, whisk together flour, baking powder, and salt. In another bowl, cream butter and sugar until light and fluffy.
  3. Add eggs one at a time, then stir in vanilla extract. Alternate mixing in dry ingredients with buttermilk until combined.
  4. Gently fold in blackberry puree and fresh blackberries.
  5. Divide batter between pans and bake for about 30 minutes or until a toothpick inserted comes out clean.
  6. Let cakes cool for 10 minutes before transferring to wire racks to cool completely.
  7. For frosting, beat butter until creamy and mix in powdered sugar and blackberry puree until smooth.
  8. Assemble by frosting between the cake layers and on the outside.
