  • 3/4 cup Biscoff cookie butter
  • 1/2 cup light or dark brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 10 tablespoons unsalted butter
  • 2/3 cup + 1/4 cup semi-sweet chocolate chips
  • 1/4 cup unsweetened Dutch cocoa powder
  • 2/3 cup + 1 tablespoon all-purpose flour

Instructions

  1. Prepare an 8×8 metal baking pan with parchment paper and chill a layer of cookie butter until firm.
  2. Preheat your oven to 350°F (180°C).
  3. In a bowl, whisk together sugars, eggs, and vanilla extract until combined.
  4. Melt butter and chocolate chips together; mix in cocoa powder and combine with the egg mixture.
  5. Fold in flour, espresso powder, and salt until just mixed.
  6. Layer half the brownie batter in the prepared pan, place the chilled cookie butter square on top, then add the remaining batter.
  7. Press broken Biscoff cookies onto the surface and drizzle additional cookie butter over the top.
  8. Bake for 30–40 minutes until a toothpick comes out with moist crumbs.
