  • 48 ounces marinara sauce
  • 1 teaspoon dried Italian seasoning

  • 2 pinches crushed red pepper flakes (or to taste)
  • ¼ cup chopped fresh parsley
  • 5 ounces baby spinach (coarsely chopped)
  • 1 egg
  • 1 cup ricotta cheese (8 ounces)
  • 9 oven-ready (no boil) lasagna noodles
  • 16 ounces shredded mozzarella cheese (about 4 cups)
  • ½ cup grated Parmesan cheese
  • chopped fresh basil or parsley (optional, for serving)

Instructions

  1. Preheat your oven to 375°F.
  2. In a large skillet, heat olive oil over medium-high heat. Sauté chopped onion, bell pepper, mushrooms, and zucchini for about 8 minutes until softened. Stir in minced garlic and cook for an additional 30 seconds.
  3. Add marinara sauce, Italian seasoning, salt, pepper, red pepper flakes, and parsley to the skillet. Simmer on low for 10 to 15 minutes; stir in chopped spinach.
  4. In a separate bowl, mix ricotta cheese with an egg until smooth.
  5. In a greased 9×13-inch baking dish, layer 1 cup of sauce on the bottom followed by three noodles. Spread one-third of the remaining sauce over noodles; add spoonfuls of half the ricotta mixture and top with mozzarella and Parmesan.
  6. Repeat layering process twice more using remaining ingredients.
  7. Finish with three noodles topped with sauce and remaining cheeses.
  8. Cover with foil (sprayed) and bake for 35 minutes. Remove foil and bake an additional 10 to 15 minutes until bubbly.
