- 1 whole chicken (5 pounds, neck and giblets removed)
- 2 tablespoons olive oil
- 1 tablespoon cumin
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 2 teaspoons kosher salt
- 1 teaspoon sweet paprika
- 1 teaspoon chili powder
- 1 teaspoon dried oregano
- ½ teaspoon ground black pepper
Instructions
- Preheat your grill to medium-high heat.
- Pat the chicken dry with paper towels to ensure crispy skin.
- Mix olive oil and spices in a bowl; rub mixture all over the chicken and inside the cavity.
- Place the seasoned chicken upright on the half-full beer can and tie its legs together with kitchen twine.
- Position the chicken over indirect heat on the grill, reduce to medium, and close the lid. Cook for about 1 hour and 15 minutes.
- Check for doneness using a thermometer (160°F–165°F at the thickest part of the thigh).
- Increase heat to high for an additional 10 minutes to crisp the skin before removing from grill.
- Let rest for 10 minutes, carve, and serve.
