  • 24 ounces marinara sauce
  • 6 ounces smoked gouda cheese
  • 2 large fresh mozzarella balls
  • 1/3 cup basil pesto

Instructions

  1. Preheat the oven to 425°F and prepare a 9×13 inch baking dish with nonstick spray.
  2. In a large saucepot, bring vegetable broth to a boil. Whisk in polenta and salt, then simmer for 15 minutes until thickened.
  3. Stir in pesto and smoked gouda until well combined. Pour into the baking dish and smooth out.
  4. Bake uncovered for 25 minutes. If not set, bake an additional 10 minutes.
  5. Top with marinara sauce, basil leaves, and mozzarella slices; bake again for 10-15 minutes until bubbly.
