  • 1 lb ground beef
  • 1 lb hot sausage
  • 3 tablespoons chili powder
  • 2 cans (15 oz each) dark red kidney beans
  • 1 can black beans
  • 4 oz tomato paste
  • 1 cup BBQ sauce
  • 12 oz lager beer
  • 1/2 poblano pepper, chopped
  • 2 stalks celery, chopped

Instructions

  1. In a large stockpot or cast iron skillet, brown the ground beef and hot sausage over medium heat.
  2. Add chopped poblano pepper, celery, and onion; sauté until vegetables are tender.
  3. Stir in chili powder, crushed tomatoes, tomato paste, and both types of BBQ sauces. Cook for about 15 minutes.
  4. Incorporate lager beer, beef stock, minced garlic, Worcestershire sauce, balsamic vinegar, and honey/sugar; mix thoroughly.
  5. Simmer on low heat for about 1.5 hours, stirring frequently. Add water if the mixture thickens too much.
  6. Finally, add the rinsed kidney beans and black beans; cook for another 30 minutes.
  7. Serve warm with preferred garnishes like sour cream or grated cheese.
