  • 23 large honeycrisp apples, grated
  • 1/4 cup salted butter
  • 1/2 cup dark brown sugar, packed
  • 2 tablespoons heavy cream
  • 1/2 teaspoon pure vanilla extract
  • 1 cup powdered sugar, sifted

Instructions

  1. Preheat your oven to 350°F and line a 9×9-inch nonstick pan with parchment paper.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, baking soda, salt, cinnamon, ginger, nutmeg, allspice, and cloves.
  3. In another mixing bowl, whisk together vegetable oil, eggs, brown sugar, granulated sugar, sour cream, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and fold just until combined; do not overmix.
  5. Gently fold in the grated apples until evenly distributed.
  6. Turn out the batter into the prepared pan and bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow cooling in the pan for 10 minutes before transferring to a wire rack.
  8. To prepare icing, in a medium-sized saucepan over medium heat, melt butter with brown sugar and heavy cream, whisking until combined; bring to a gentle boil.
  9. Remove from heat and whisk in vanilla extract and powdered sugar until smooth.
  10. Pour the warm icing over the cake while it’s still slightly warm.
