  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch (or 2 tablespoons all-purpose flour)
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • boiling water (for the water bath)
  • salted caramel sauce

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Prepare a 9-inch springform pan by wrapping it in foil and greasing it lightly.
  3. Mix graham crumbs, brown sugar, and melted butter to form the crust; press into the bottom of the pan.
  4. Sauté sliced apples with brown sugar and cinnamon until tender; set aside.
  5. Beat cream cheese until smooth, then add sugars, cornstarch, vanilla, sour cream, and eggs; mix until just combined.
  6. Layer half the cheesecake batter over the crust, followed by sautéed apples, then top with remaining batter.
