  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter (room temperature)
  • 3/4 cup granulated sugar
  • 2 large eggs (room temperature)
  • 3/4 cup buttermilk
  • 2 teaspoons vanilla extract
  • 2 medium apples (peeled and diced)
  • 1/3 cup brown sugar
  • 1 tablespoon cinnamon

Instructions

  1. Preheat the oven to 350°F (180°C) and line a baking tin with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, cream butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  4. Gradually mix in the dry ingredients with buttermilk until just combined.
  5. Toss apples with brown sugar and cinnamon in a separate bowl.
  6. Layer half the batter in the tin, sprinkle half the apple mixture on top, swirl gently, then add remaining batter and apples; swirl again.
  7. Bake for 55–65 minutes until golden brown and a toothpick comes out clean.
  8. Cool in the pan for ten minutes before transferring to a wire rack.
