  • 3 tbsp granulated sugar
  • 1 3/4 cups all-purpose flour
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter
  • 3/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 2 egg yolks
  • 2 tsp vanilla
  • 2 tbsp apple cider reduction
  • 1/4 cup granulated sugar for topping
  • 1/4 tsp ground cinnamon for topping
  • 1/8 tsp ground nutmeg for topping
  • pinch ground allspice for topping
  • 12 tbsp salted butter, melted for topping

Instructions

  1. Prepare apple cider reduction by simmering cider until reduced by half. Let cool.
  2. Mix cream cheese, sugar, and vanilla until smooth to create the cheesecake filling.
  3. In a separate bowl, combine flour and spices. In another bowl, beat butter and sugars until fluffy; add egg yolks and vanilla.
  4. Gradually mix in dry ingredients until combined.
  5. Preheat oven to 350°F (175°C). Form dough around a dollop of cheesecake filling and place on a parchment-lined baking sheet.
  6. Bake for about 11 minutes until golden around edges; let cool slightly before transferring to a rack.
  7. Brush warm cookies with melted butter and sprinkle with spiced sugar topping.
