  • 2 medium sweet potatoes
  • 2 Honeycrisp or Gala apples
  • 1/2 red onion
  • 4 cups vegetable stock
  • 1 cup organic heavy cream
  • 12 cups mild cheddar cheese
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1/2 teaspoon cayenne pepper
  • 4 garlic cloves, minced
  • 1 tablespoon raw honey, organic
  • 23 tablespoons unsalted butter, softened at room temp.

Instructions

  1. Preheat your oven to 400°F (200°C). Peel and cube the sweet potatoes and slice the apples. Toss them on a baking sheet with olive oil, cinnamon, and nutmeg. Roast for 25-30 minutes until tender.
  2. In a large pot over medium heat, sauté chopped red onion in olive oil until translucent (about 5 minutes), then add minced garlic and cook for another minute.
  3. Add the roasted sweet potatoes and apples to the pot along with vegetable stock. Bring to boil, then simmer for about 10 minutes.
  4. Blend the mixture until smooth using a blender. Return to the pot and stir in heavy cream and cheese until melted.
  5. Season with remaining spices to taste and serve hot.
