- 150 g Salted Butter
- 100 g Light Brown Sugar
- 100 g Caster Sugar
- 1 large Egg
- 200 g Plain Flour
- 100 g Ground Almonds
- 1 tsp Bicarbonate of Soda
- 50 g Melted Butter
- 1 tsp Almond Extract
- 50 g Flaked Almonds
- 50 g Icing Sugar
Instructions
- Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.
- In a mixing bowl, cream together salted butter, light brown sugar, and caster sugar until fluffy.
- Mix in the egg and almond extract until smooth.
- In another bowl, whisk together plain flour, ground almonds, and bicarbonate of soda; gradually combine with wet ingredients.
