  • 1/2 tsp vanilla extract

  • 1/4 cup + 2 tbsp ground almonds
  • 1/3 cup all-purpose flour
  • 1 3/4 cups all-purpose flour (for base dough)
  • 3/4 cup unsalted butter (softened)
  • 3/4 cup light brown sugar
  • 2 egg yolks (room temperature)
  • Sliced almonds (for topping)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In one bowl, mix melted butter, granulated sugar, egg yolk, vanilla, almond extract, ground almonds, all-purpose flour, and salt until combined.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt. Cream softened butter with brown and white sugars until fluffy; add egg yolks one at a time along with vanilla and almond extracts. Gradually mix in dry ingredients.
  4. Fold the cookie dough into the base dough until fully incorporated.
  5. Scoop out portions of dough onto the prepared sheet; press slightly in the center.
  6. Top each cookie with sliced almonds and dust with powdered sugar.
  7. Bake for about 13 minutes or until edges are golden; cool on a wire rack.
