- 6 tbsp vegan butter
- ⅔ cup sugar
- ⅔ cup unsweetened applesauce
- ¼ cup non-dairy milk
- ¼ cup lemon juice
- 2 tsp baking powder
- 1⅓ cups all-purpose flour
- ½ cup almond flour
- ¼–⅓ cup mashed strawberries
- ½–¾ cup powdered sugar

- In a small bowl, melt the vegan butter. In a larger bowl, whisk together melted butter, sugar, applesauce, lemon juice, and non-dairy milk until smooth.
- Add baking powder and flours to the mixture; stir until just combined to avoid overmixing.
- Pour the batter into the prepared loaf pan and smooth out the top. Bake for about 45 minutes or until a toothpick inserted comes out clean.
