  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 12 tablespoons chili paste (to taste)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt
  • Black pepper
  • Fresh cilantro (for garnish)
  • Juice of 1 lime

Instructions

  1. In a mixing bowl, combine chicken thighs, coconut milk, olive oil, onion, garlic, ginger, chili paste, cumin, paprika, salt, and pepper. Mix well.
  2. Cover and marinate in the refrigerator for at least 1 hour or overnight for best flavor.
  3. Preheat your oven to 375°F (190°C).
  4. Transfer the marinated chicken into a baking dish with all marinade included. Spread evenly.
  5. Bake for 35–40 minutes or until chicken reaches an internal temperature of 165°F (74°C).
  6. Allow to rest for 5 minutes before squeezing lime juice over the top and garnishing with cilantro.
