Ingredients
- 4–5 lbs pork shoulder
- 2 tablespoons vegetable oil
- 2 tablespoons toasted sesame seed oil
- 2 tablespoons ginger powder
- 1 tablespoon garlic powder
- 1 tsp EACH salt, onion powder
- 1/2 teaspoon black pepper
- 1/2 cup coconut milk
- 1/2 cup reduced sodium soy sauce
- 1/3 cup Japanese sweet rice wine/mirin
- 1/4 cup Asian sweet chili sauce
- 2 tablespoons fish sauce
- 1 tablespoon Sriracha
- 1 tablespoon cornstarch
- 1 1/4 cup packed brown sugar
- 1/4 cup water
Instructions
- Lightly spray a slow cooker with nonstick spray and set aside.
- In a bowl, whisk together the wet spice rub ingredients. Massage it into the pork.
- Heat vegetable oil in a skillet; sear the pork on all sides until browned.
- Place the seared pork in the slow cooker.
- Whisk together the sauce ingredients and pour over the pork.
- Cook on LOW for 8-10 hours or HIGH for 5-6 hours until tender.
- Shred the pork and mix with caramel sauce before serving.
