  • 1 cucumber (sliced)
  • 1 red bell pepper (diced)
  • ½ red onion (thinly sliced)
  • 2 tablespoons freshly squeezed lime juice
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Wash and prepare all produce. Peel mangoes and cut them into small cubes. Slice cucumber, red bell pepper, and red onion thinly.
  2. In a large bowl, combine diced mangoes, cucumber slices, bell pepper pieces, and red onion. Toss gently.
  3. In a separate bowl, whisk together lime juice and olive oil. Add salt and pepper to taste.
  4. Pour the dressing over the salad mixture and toss until well coated.
