- 2 ripe mangoes (cubed)
- 1 cucumber (sliced)
- 1 red bell pepper (diced)
- ½ red onion (thinly sliced)

Instructions
- Wash and prepare all produce. Peel mangoes and cut them into small cubes. Slice cucumber, red bell pepper, and red onion thinly.
- In a large bowl, combine diced mangoes, cucumber slices, bell pepper pieces, and red onion. Toss gently.
- In a separate bowl, whisk together lime juice and olive oil. Add salt and pepper to taste.
- Pour the dressing over the salad mixture and toss until well coated.
