  • 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 3 tablespoons unsalted butter, cold and cut into cubes
  • ½ cup buttermilk, cold
  • 1 large egg + 1 tablespoon water, for egg wash (optional)
  • Cinnamon sugar, for sprinkling (optional)

Instructions

  1. Prepare the crust: Mix flour, sugar, and salt in a bowl. Cut in cold butter until crumbly. Gradually add buttermilk until just combined. Chill for at least 30 minutes.
  2. Make the filling: Toss sliced peaches with lemon juice, sugar, flour, and cinnamon.
  3. Assemble: Preheat oven to 375°F (190°C). Roll out half the dough for the base and place in a baking dish. Add peach filling and top with rolled-out dough; seal edges and cut slits for steam.
  4. Bake: Brush with egg wash and sprinkle with cinnamon sugar if desired. Bake for about 45 minutes until golden brown.
