- 4 medium-sized sweet potatoes
- 1 pound ground turkey or beef
- 1 packet taco seasoning
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (14.5 oz) diced tomatoes
- 1 cup shredded cheddar or Mexican blend cheese
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 400°F (200°C). Wash sweet potatoes thoroughly and poke holes in them.
- Place the sweet potatoes on a lined baking sheet and bake for 45-50 minutes until tender.
