Ingredients
- 4–6 bone-in chicken thighs
- 1 pound baby potatoes (red or yellow)
- 1 bunch fresh asparagus

- 1 tablespoon dried rosemary
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
- In a bowl, coat the chicken thighs with olive oil, thyme, rosemary, salt, and pepper.
- Halve the baby potatoes and trim the asparagus. Arrange them around the chicken on the baking sheet.
