Ingredients
- 1 cup yellow lentils (toor dal)
- 4 cups fresh spinach
- 1 medium onion, chopped
- 1 medium tomato, chopped
- 2 teaspoons garlic paste
- 2 teaspoons ginger paste
- 1 teaspoon cumin seeds
- 0.5 teaspoon turmeric powder
- 1 teaspoon coriander powder
- Salt, to taste
- 2 tablespoons oil
Instructions
- Rinse the yellow lentils under cold water until the water runs clear.
- In a pot, combine rinsed lentils with three cups of water; bring to a boil, reduce heat, cover, and simmer for about 20 minutes until tender.
- Heat oil in another pan over medium heat; add cumin seeds and let them sizzle.
- Add chopped onions and sauté until golden brown.
- Stir in chopped tomatoes along with garlic and ginger pastes; cook until softened.
- Add spinach and stir until wilted (about two minutes).
- Combine cooked lentils with the spinach mixture; season with turmeric and coriander powders, then simmer for an additional five minutes.
