- 4 boneless, skinless chicken breasts (1.5 lbs)
- 2 cloves garlic, minced
- 1 cup basmati rice
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 2 tsp dried thyme
- 2 tsp dried oregano
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat and sear chicken for about 6-7 minutes on each side until golden brown. Remove from skillet.
- In the same skillet, sauté garlic until fragrant (about 1 minute). Add heavy cream and chicken broth, scraping the browned bits from the bottom of the skillet. Stir in thyme and oregano; simmer for 5 minutes until slightly thickened.
- Return chicken to the skillet, cover, and cook on low heat for another 10 minutes.
- Meanwhile, rinse basmati rice under cold water. Bring 2 cups of water to boil in a separate pot; add rice with a pinch of salt, reduce heat to low, cover, and simmer for about 15 minutes until water is absorbed.
- Serve creamy herb chicken over basmati rice and drizzle with sauce.
