  • ¼ cup granulated sugar (plus extra for topping)
  • Pinch of Kosher salt
  • 5 large egg yolks
  • 1 Tbsp instant espresso powder
  • 1 Tbsp Kahlua
  • Hot water

Instructions

  1. Preheat oven to 300°F and place ramekins in a baking pan.
  2. In a saucepan, combine heavy cream, sugar, and salt over medium heat until dissolved.
  3. Whisk egg yolks in a bowl and gradually add the cream mixture.
  4. Mix espresso powder with Kahlua; stir into custard and strain through a sieve.
  5. Divide mixture among ramekins and add hot water to the pan halfway up the sides.
  6. Bake for 25–35 minutes until set but slightly jiggly.
  7. Cool completely, refrigerate for at least four hours or up to two days.
  8. Before serving, sprinkle sugar on top and caramelize using a kitchen torch.
