  • 1 cup canned full-fat coconut milk
  • ½ cup chicken broth
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • ½ teaspoon paprika
  • ½ teaspoon chili flakes (optional)

Instructions

  1. Season the chicken with salt, pepper, garlic powder, cumin, paprika, and optional chili flakes.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4–5 minutes on each side until golden brown. Remove from skillet and set aside.
  3. In the same skillet, sauté the chopped onion until softened; add minced garlic and cook briefly.
  4. Pour in chicken broth while scraping the browned bits from the skillet. Stir in coconut milk, lime juice, and soy sauce/honey.
  5. Return the chicken to the skillet and simmer for an additional 5–7 minutes until cooked through.
