- 3 pounds bone-in chicken pieces
- 1 pound cremini mushrooms
- ½ cup cognac or brandy
- ½ cup white wine
- 1½ cups chicken stock
- 2 tablespoons fresh tarragon
- ¾ cup sour cream
- 3 Russet potatoes
- 4 tablespoons butter, divided
- 4 tablespoons olive oil
- 2 teaspoons kosher salt
- ½ teaspoon black pepper
- ¼ cup shallots, diced
- 1½ tablespoons garlic, minced
- 3 tablespoons tomato paste
- 2 Roma tomatoes, diced
- ½ cup beef stock
- ¼ cup fresh parsley
Instructions
- Season the chicken pieces with salt and pepper.
- In a large skillet, heat butter and olive oil over medium heat; brown the chicken for about 8 minutes on each side until golden brown. Remove from skillet and keep warm.
- In the same skillet, sauté mushrooms for 3 minutes; add shallots and garlic, cooking until fragrant.
- Pour in cognac and white wine, reducing slightly before adding tomatoes, chicken stock, beef stock, and sour cream. Simmer until thickened.
- Stir in tarragon, return the chicken to the pan to coat in the sauce, then garnish with parsley before serving.
