  • 3/4 cup granulated sugar

  • 1/3 cup cornstarch
  • 2 tablespoons butter

  • Homemade pie crust (makes 2 crusts)
  • 1 large egg white (beaten)
  • Granulated sugar (for sprinkling)

Instructions

  1. Prepare the cherries by washing fresh ones and removing pits or draining canned ones.
  2. In a mixing bowl, combine cherries, sugar, lemon juice, and cornstarch; mix gently and let sit for 10 minutes.
  3. Roll out one pie crust into a circle and place it in a pie dish.
  4. Pour the cherry filling into the crust and dot with butter. Cover with the second rolled-out crust, sealing edges.
  5. Preheat oven to 425°F (220°C). Brush top with egg white and sprinkle with sugar. Bake for about 45 minutes until golden brown.
