Ingredients
- 8 oz lean ground turkey
- ½ can black beans (approx. ¾ cup), drained
- 6 fajita-size flour tortillas
- 1 ½ cups shredded Monterey Jack cheese
- ½ avocado
- ¼ cup sour cream

- cilantro
Instructions
- Heat oil in a skillet over medium heat, add ground turkey, and cook until browned (5-6 minutes). Stir in taco seasoning.
- Add onion, black beans, and green chiles; cook for another 3-5 minutes. Remove from heat and stir in cilantro if desired.
- Preheat oven to 400°F (200°C). Brush tortillas with oil, place on a baking sheet, fill with the turkey mixture and cheese, then fold.
