  • ½ can black beans (approx. ¾ cup), drained
  • 6 fajita-size flour tortillas
  • 1 ½ cups shredded Monterey Jack cheese
  • ½ avocado
  • ¼ cup sour cream
  • lemon juice
  • cilantro

Instructions

  1. Heat oil in a skillet over medium heat, add ground turkey, and cook until browned (5-6 minutes). Stir in taco seasoning.
  2. Add onion, black beans, and green chiles; cook for another 3-5 minutes. Remove from heat and stir in cilantro if desired.
  3. Preheat oven to 400°F (200°C). Brush tortillas with oil, place on a baking sheet, fill with the turkey mixture and cheese, then fold.
  4. Bake for 10-12 minutes until crispy and golden brown.
  5. For the avocado sauce: Blend all ingredients until smooth.
